2 boneless, skinless, lightly seasoned chicken breasts
2 medium onions, sliced & ringed
2 whole mandarin oranges (with rind), sixthed
1/2c. packed brown sugar
2tbsp. prepared mustard
1/2 tsp. crushed red chili peppers
Combine all ingredients in a 9x13 baking pan. Bake at 350F for around 70 minutes, stirring/ flipping occasionally. Remove all from baking pan, place into frying pan at Med-Hi heat. Cook until browned/glazed/liquid is gone, stirring constantly. Remove orange chunks. Serve with lightly cooked and buttered whole green beans over brown rice.
